Welcome to Quintana!

Open since 10 July 2008, the Quintana is located in a cozy house that retains traces of the past. Around, lots of art, culture and books, to make you feel at home. Outside, the garden delights as a home to several species of native stingless bees, the variety of plants and plants produced there, and the perfect harmony with nature in the midst of the urban environment. The ecodeck transpires the sustainable values ​​when cooled by a reuse of rainwater. Capacity for up to 100 people in the internal environment, and 100 in the external environment. We were inspired by Mario Quintana - a famous poet who once said: "to love is to change the soul of the house". And we've always changed! We reinvent ourselves, we produce more. We recognize traditions and encourage culture on all fronts - with a library of books, art exhibits, paintings, photographs and sculptures. We always find a new way of loving culture and gastronomy.




Chef and Creator - Gabriela Vilar de Carvalho

Idealizer of Quintana, Paranaense and Alagoana, hotel for training and passionate about the power of food. He loves to plant, to produce, to cook, to learn and to travel. His family is a source of inspiration, along with a committed and special team. Practitioner of the Method DeRose, motorcyclist and chef de cuisine, acts with the intention to transform for the better, the world around him.

Dishes full of aroma and lightness, reminiscent of the influence of countries like Spain, Italy, Greece and Turkey. They are fresh and colorful ingredients, which confirm this gastronomic identity. Among the classics of the day, ratatouille, fillet of tilapia with extra virgin olive oil, tomatoes, capers and purple onion, and the salad of grains with olives, basil, roasted tomatoes and balsamic sauce.

TUESDAY - Asia and Oceania

Asia brings its exotic and fresh flavors, with spices based on herbs, peppers, ginger and fruits. Curry and stir-fry are present, as are oriental sauces and organic tofu.
